Cheesecake

This is the traditional cheesecake from our childhood. It always reminds me of Stephen.

We love this recipe because its not only easy, but tasty. No eggs or baking time required. Doesn't get much better than that!

Cheesecake

1 8 oz. package Cream Cheese, softened
1 can Sweetened Condensed Milk
1/3 Cup Lemon Juice
1 tsp. Vanilla
1 Prepared Graham Pie Crust (you can make you own, but this is the easy way out!)

Beat softened cream cheese in mixer until light and smooth. Slowly add in sweetened condensed milk and continue to beat. Add lemon juice and vanilla and thoroughly combine. Pour into graham crust and refrigerate for 2-3 hours before serving. Top with fresh berries or pie filling of choice. Voila!

  2. He loved to tell me how the lemon juice would come from lemons on the backyard tree. Can't get any better than that!

  3. This is one of Richard's favorites as well. It's so good and so easy. The first time I made this was in 7th grade TLC (cooking class).

  4. I never knew it was Stephen's favorite, but I do remember that the first time I had it was when your mom (Shauna) made it for a Stout family gathering. It might have been the one that ended up in Paul's face. I was 7 yrs old.
