Sesame Chicken & Asparagus Pasta

I found this online the other day and thought it looked too good not to try. Boy was I right! Just make it, you will love it. I didn't get the sauce mixed in very well in this little picture; it should be coating the noodles more.


Sesame Chicken & Asparagus Pasta

8 oz. Linguine Noodles {about half of a 1 lb. box}

Sauce:
3 Cloves Garlic, minced
1 TBSP Red Wine Vinegar
1 TBSP Brown Sugar
6 TBSP Chunky Peanut Butter
1/4 Cup Soy Sauce
1/4 Cup Sesame Oil
1/2 - 1 TBSP Hot Chili Oil

2 Large Chicken Breasts, cooked and shredded
5 TBSP Sesame Seeds, toasted
1 Lb. Asparagus, trimmed and blanched
3 Scallions, white & green parts
1 Small Cucumber

Cook and shred chicken (I boiled mine). Mix first 6 sauce ingredients in food processor and blend for 1 minute. Add hot chili oil through feeding tube and continue to blend. Set aside.

Cook pasta according to package directions. Drain and run under cold water.

Slice up asparagus in 1/2 inch pieces and blanche in boiling water. Drain and add to noodles.

Cut cucumber into small chunks, and dice scallion.

Add chicken and 4 TBSP of sesame seeds to noodles. Toss, add in peanut sauce, and toss again. Top with cucumber and scallions. Enjoy!


**Just a random little tidbit... I LOVE Persian Cucumbers. they are so cute and small and don't have any seeds! I got these @ Trader Joe's, but I have gotten them @ Costco before too. Here they are compared to a regular size cucumber.

{You can always leave the chicken out as well and make this a vegetarian meal}.

  1. How long do you blanch the asparagus and where do you find chili oil in the grocery store. It looks like it would be delicious. Who did you make this for?

  4. We made this Saturday night for dinner. It was really really good!!
    It was a little spicy for me, I added almost a full TBSP of hot chili oil, but the next day we had a little left for leftovers and it was much more mild. Did this happen to yours? Any idea why?

  5. I meant to also say that I found the chili oil in the Asian foods section of the grocery store and that we used wheat linguini. I usually don't like wheat pasta, but this sauce is so flavorful that I didn't mind it at all, and it makes it healthier.
