Strawberry Mango Salsa

So, is it Summer yet??

No.

Dang.

Well, this delicious salsa will make you at least think about Summer!

I served it with cinnamon sugar pita chips as a side, but I think it would also be wonderful on a grilled tilapia or chicken breast. I didn't have either of those proteins on hand though, so we just snarfed it down with the chips! If you aren't a huge basil fan, I would recommend starting out small and adding more to taste (I only did 4. But they were larger anyway).



Strawberry Mango Salsa

3/4 Cup Strawberries, finely diced
3/4 Cup Mangos, finely diced
1/4 Cup Red Onion, finely chopped
6 Basil Leaves, finely chopped
1 TBSP Fresh Lemon Juice
1/4 tsp. Sea Salt
1/4 tsp. Black Pepper

Combine all ingredients and allow to sit in the refrigerator for a few hours, covered.

We ate this in about 2 days... but I hear it keeps well in a sealed container for about a week.

  6. I'm sure this is already a common knowledge comment, but just in case...please, please, please be sure you PEEL the mango prior to cutting it up...

  7. The Pampered Chef sells an awesome tool called a "Mango Wedger".. It is wonderful!!! They also have a "Pineapple Wedger".. These tools make it so easy to enjoy fruits we may not want to buy because it take so much work to get into them.

  9. Salsa is in the fridge, chicken is in the oven, and by the time I make my salad I'll be ready to try this wonderfully colorful recipe!! I bought pita chips, too, so I can take some to work tomorrow to let the girls try it! Can't wait ... thanks!(Don't know where the "Aunt Linda" came from, but don't know how to change it!!!)
