Orange Souffle' French Toast

I made this as part of our Father's Day Breakfast and it turned out really yummy! It actually tasted like an orange roll, but not as sweet. We had a big mushroom/bacon breakfast casserole with it. Also delicious ... you can get that recipe over @ Pioneer Woman.

The best part about both recipes... I made them all up on Saturday night and then just had to plop them in the oven on Sunday morning. Awesome! The other best part... we had some unexpected guests stay over night on Saturday and it was great to have a nice breakfast for them in the morning! Double Awesome!


Orange Souffle French Toast

4 Eggs
2/3 Cup Orange Juice
1 1/2 TBSP Orange Extract
1 Orange, zested
2 Egg Whites
8 Slices of French Bread, about 1 inch thick {I used Challah Bread. It was DELICIOUS! Its a Jewish bread thats a bit sweeter than normal french bread. It was perfect}

Fresh berries, powdered sugar, syrup {to taste}.

Mix eggs, orange juice, extract, and orange zest in shallow baking dish. Whip egg whites into stiff peaks and gently fold into egg/orange mixture. add bread and coat both sides. Soak for up to 24 hours, the longer the better {I did about 14 hours}.

When ready to serve, move bread to a greased jelly roll sheet and bake @ 350 degrees for about 25 minutes, or until firm to the touch.

Serve with berries, powdered sugar, and syrup. Delish!

This is what the bottom side of the toast looks like... a beautiful golden color!
