Apple Cake


I got this recipe from my Mission Presidents wife last year and just got around to making it last night for the first time. I wish I had made it sooner because it was delicious! Its not a super sweet cake, but when you add the caramel glaze it knocks it up a notch and makes it even better. Because of the applesauce and the bundt shape, this is a really moist cake and doesn't even need anything served with it, but we had some vanilla ice cream with it and added some of the caramel to that as well. Yum!

This would be a great cake to make in the fall, but I didn't want to wait any longer! Summer Apple Cake sounds great right?! :)

Apple Cake

1/2 Cup Butter, softened
1 3/4 Cup Sugar
1 3/4 Cup Applesauce
3 Eggs
1/4 tsp. Baking Powder
1 1/2 tsp. Baking Soda
1 tsp. Salt
1 tsp. Cinnamon
1/2 tsp. Ground Cloves
1/2 tsp. All Spice
1/2 tsp. Nutmeg
2 1/2 Cups Flour

Cream butter and sugar. Add applesauce and mix until combined. Add eggs, one at a time, mixing after each addition. Add dry ingredients and beat on medium speed for 2 minutes, making sure to scrape the bowl and get all the spices mixed in well.

Bake in sprayed and floured bundt pan for 45-55 minutes @ 350 degrees.

Cool on wire rack for about 20 minutes before inverting to cake platter. Prepare Hot Caramel Sauce {recipe below}.

When sauce is ready, you can either poke small holes with a toothpick into the top of the cake and drizzle the hot caramel sauce over it, or top the individual slices when served. I prefer to top individual slices... I think the caramel seeps into the cake better this way. Eat it up and enjoy every last morsel!

Hot Caramel Sauce

1/2 Cup Butter
1 Cup Brown Sugar
1/2 Cup Heavy Cream
1 tsp. Vanilla

Combine first 3 ingredients in saucepan and bring to a boil. Boil and stir for 1 minute. Remove from heat and stir in vanilla. Serve over hot apple cake.

  3. I was FABULOUS. Not too sweet, and not too heavy. Johnny Appleseed would be proud t know his apples are being put to good use.
