1 Zucchini, 2 Zucchini, 3 Zucchini, 4!



Its ZuCcHiNi season folks, & one of our friends gave us a bunch of fresh zucchini. So, I decided to make some zucchini bread.

Only problem:


I've got a LOT of zucchini, & there are too many good recipes for bread. So instead of just making my classic Zuk Bread, I tried a few new ones this year, and I thought I would share the delicious recipes in one post rather than 3 separate ones. Yes, I know the title says 4, but I ran out of zucchini steam after the 3rd recipe. You'll just have to be okay with 3 new zucchini bread recipes! :)


Numero Uno: Recent Discovery



3 Cups Flour
2 tsp. Baking Soda
1 tsp. Salt
1/4 tsp. Baking Powder
1 tsp. Cinnamon
1/2 tsp. Nutmeg
1/4 tsp. Cloves
1/4 tsp. Allspice
1 Cup Vegetable Oil
2 Cups Sugar
2 Eggs
2 Cups Grated Zucchini
2 tsp. Vanilla

Combine first 8 ingredients. Sift and set aside. Beat oil, sugar, & eggs until well blended. Add zucchini, vanilla & flour mixture and mix well. Bake @ 350 degree's in 4-5 medium bread pans for approx. 40 minutes, or 2 large bread pans for 50-55 minutes. Check for doneness with toothpick. Cool on wire racks. Remove from pans after about 15 minutes.


Numero Dos: Mother-in-Law ZB


3 Eggs
1 Cup Oil
2 Cups Grated Zucchini
1 TBSP Vanilla
3 Cups Flour
1 tsp. salt
1 tsp. Baking Soda
1/4 tsp. Baking Powder
1 TBSP Cinnamon
1 Cup White Sugar
1 Cup Brown Sugar, packed

Combine first 3 ingredients in a blender (I just mix it up in my kitchenaid). Measure and sift together the next 6 ingredients. Add to wet mixture and mix well. Bake @ 350 degree's in well greased loaf pans. Bake for 40 minutes in medium size pans, and 50-55 minutes in large loaf pans. Check with toothpick for doneness. Cool on wire racks before removing bread from pans. **Go ahead and throw some chocolate chips in if you are feeling exotic!


Numero Tres: Chocolate Zucchini Bread



2 Cups Grated Zucchini
1 Cup Flour
1/2 Cup Cocoa Powder
1 tsp. Baking Soda
1/4 tsp. Baking Powder
1/4 tsp. Salt
1/2 tsp. Cinnamon
1/2 Cup Canola Oil
1/2 Cup Granulated Sugar
1/2 Cup Light Brown Sugar, packed
2 Eggs
1 tsp. Vanilla
3/4 Cups Semi Sweet Chocolate Chips

Preheat oven to 350 degree's.

In large bowl, whisk together the first 7 ingredients. Set aside. In electric mixer, mix together the wet ingredients & sugar (next 5 ingredients) until well blended, about 2 minutes. Fold in the grated zucchini. Add the flour mixture and mix until just combined. Fold in the chocolate chips. Scrape batter into greased pans. Bake medium size pans for 40 minutes and large pans for 50 minutes. Check with toothpick for doneness. Cool on wire racks for about 10 minutes before removing bread from pans to cool completely.

**this recipe was also referred to as "Cake" by a certain 2 year old.

  2. Legend tells of a legendary bread whose taste is of legend! So here is the low down from one who is in the Zuk know. The first one is good. Not the classic crust, but defenitely a classy taste. Perhaps a little more spice than sugah as well. 2nd Zuk is legendary and also delicious. Mama condie's recipe makes one smile all the way to the next slice (which is 30 secs after eating the first. I can't say anything to the choco-bread as I did not try it. Go for one and two and you will be blinded by their awesomeness.

  3. I need to find some one who is rolling in zucchini so I don't have to buy some at the store :). We've never really made zucchini bread at my house, I've had some though. I'll have to try one of these.
