Broccoli Cheddar Soup


Greg loves Soup. He told me once that if he could master the art of baking/cooking one food, it would be soup. We haven't had any in a while... seeing as how its Summer and all... but one day this week was really rainy and dreary so I thought what the heck! It didn't hurt that we had just gone to the Farmers Market and purchased some 7 year aged Cheddar and some Smoked White Cheddar. So yummy!

Broccoli Cheddar Cheese Soup

1 can Chicken Broth
1 Onion, diced
1/3 Cup Flour
1/4 Cup Butter
Salt and Pepper to taste
2 Cups Milk
2 Cups Sharp Cheddar Cheese, shredded
1/2 Cup Swiss Cheese, shredded
2-3 Large Bunches of Steamed Broccoli, or however much you like

Simmer chicken broth and onion in a covered sauce pan until onions are soft {about 20 minutes}. Heat milk in microwave for 2 minutes. In a separate pot, melt butter and add flour, salt and pepper to forma rue. Cook for 2-3 minutes and then add warmed milk. Stir and heat through on medium heat until soup starts o thicken. Add chicken broth and onion mixture and stir. Lastly, add cheeses and broccoli and heat through. Serve immediately.

** You can use Vegetable Broth and make this a vegetarian soup.

  3. we made this soup again today as it is starting to feel like fall here (soup weather) and we loved it. spencer made me add potatoes and it was divine. we didn't even peel them (spencer is lazy that way).
