Caramelized Acorn Squash


I adapted this from a couple recipes I found on Taste of Home's website.

1-2 Acorn squash
cinnamon
nutmeg
1/2 C butter, softened
2/3 C brown sugar

Slice the acorn squash horizontally into 1/2 inch rings. I had trouble cutting through the thick skin so I had to cut it in half to make a flat bottom first. Spray a 9"x13" with cooking spray. Lay the slices of squash in the pan and sprinkle with cinnamon and nutmeg to taste. Cover with tin foil and bake at 350 for 35-40 minutes or until tender.

Mix the butter and brown sugar together and spread on the squash. Bake uncovered for 15-20 minutes.

  3. I have made all the recipes I've posted. They are a combo of family recipes, my versions of recipes and some I've gathered from other sources. I'm pretty sure we have all made them first and the pictures are from us.
