I got this recipe years ago from my friend Kim. It's delicious!
4-6 defrosted chicken breasts
1 cup flour
1 cup bread crumbs
2 eggs
2 tsp. water
1 can pineapple chunks
1 green pepper cut into chunks
1/2 onion cut into chunks
Chop up chicken into bite size pieces. Mix flour and bread crumbs in a bowl Mix the egg and water in another bowl. place chicken in the egg and water mixture; coat each piece with the flour mixture. Fry in a wok or on the stove in oil until light brown; set aside in a 9x13 baking dish.
SAUCE
3/4 cup sugar
1/2 cup vinegar
1/4 cup pineapple juice
3 TBsp ketchup
1 TBsp soy sauce
1 TBsp corn starch
Prepare sauce ingredients on the stove over medium heat. Pour the can of pineapple chunks over the chicken, including the remaining juice. Pour the sauce over the chicken, making sure each piece is coated. Bake at 350 for 35-45 minutes. Stir occasionally during baking. Serve over a bed of rice.

ReplyDeleteWe had this for dinner last night. It was delicious! I don't usually love sweet and sour dishes, but thought I would give this a try. I think it was a little more sweet than sour, which is why I liked it! :)
ReplyDeleteHi Emily, I'm making a huge recipe of this for Olivia's 9th birthday party, a big luau. Wish me luck (and I'm also having cheap pizzas for the kids as their tastes probably aren't to the point where they would appreciate this fine cuisine!
