German Pancakes & Syrup


This German pancake recipe comes from one of my best friends I grew up with dancing at Children's Dance Theater at the U of U. It's a great way to use up some eggs and it's high in protein.

1 cup milk
6 eggs
1/2 teaspoon salt
1 cup flour
1 stick of butter

Syrup:
1 stick of butter
3/4 cup buttermilk
2 cups sugar
2 teaspoons vanilla
1/2 teaspoon baking soda


In a blender, blend well the milk, eggs, salt and flour. Melt 1 stick of butter in 9"x13" pan. Pour in mixture and bake for 20 minutes at 400. For syrup, boil the buttermilk, 1 stick butter and sugar. Add 2 teaspoons vanilla. Just before serving, while sauce is hot, add the baking soda.

  2. I'm not a huge egg fan either, but I love these. If I don't make the syrup, I will add about 1/4 C sugar (or a little less) to sweeten it up, but I love things really sweet.

  3. For an interesting variation use powdered sugar in place of flour in the German pancake mix. Just kidding Annie!
