Black Bean Salsa


This is Andrea's recipe, but we really like it so I thought I would pass it along. Its a great salsa recipe that is super easy to make. Not only is it good with your favorite tortilla chips, but its not bad on a taco or enchilada either. It makes quite a lot, so be ready to share.

Black Bean Salsa

1 can Black beans, drained
1 Can Corn, drained
2 Medium/Large Tomatoes
2 Medium/Large Avacados
1/2 red onion, finely diced
1/2 Green Pepper, finely diced
1 envelope Dry Italian Salad Dressing Mix

Make Italian dressing according to directions on the back of envelope {you can also substitute half water for half of the oil for a healthier alternative. Tastes about the same}.

Mix everything together and let it marinate in the fridge for at least 1 hour. Serve with tortilla chips. This makes a good amount, but will keep in the fridge for a few days. Enjoy!

  2. This sounds good, I don't think I've ever had salsa with dry Italian dressing in it.
