Ranger Cookies


There are lots of Ranger Cookie recipes out there, but this is the one we like. I am not the biggest peanut butter fan, which is why I think I like this ranger recipe... no peanut butter! I also used whole wheat flour in these cookies, and you would never know. I had a bunch of Easter M&M's left over so this was a perfect way to use them!

Ranger Cookies

1 Cup Margarine, softened
1 Cup White Sugar
1 Cup brown Sugar
2 Large Eggs
1/2 TBSP Vanilla
2 tsp. Baking Soda
1/2 tsp. Baking Powder
2 Cups Flour
2 Cups Oats
2 Cups Rice Krispie Cereal
1/2 Lb. M&M's {I also throw some butterscotch chips in}

Cream margarine, sugars, eggs, and vanilla. Add baking soda, baking powder, and flour. Blend well. Stir in oatmeal, Rice Krispies, and M&M's. Mix by hand until all ingredients are incorporated. Roll into medium size balls with a cookie scooper and place on parchment covered baking sheets. Bake @ 350 degrees for 10-12 minutes. remove from oven and tap cookie sheet to help flatten cookies. Will make about 5 dozen medium size cookies!

{also, I have tried to double this in the past... a double batch won't fit in my KitchenAid mixer!}

  1. I am definitely going to HAVE to try these! They look delish!! I swear you should open a booth at the farmer's market this summer... which by the way- starts this SATURDAY!
