Amelia's Lasagna

This recipe originally came from Grandma McConkie.  We've altered it a little bit.  Yummy!

Lasagna

Meat mixture
1 1/2 lb hamburger (browned)
1 clove garlic
1 TBSP sweet basil
1 TBSP parsley
1 TBSP salt
1 can (14.5 oz) diced tomatoes
1 can tomato paste
1 can tomato soup

Cheese mixture
1/3 cup parmesan cheese
3 cups cottage cheese
2 TBSP parsley
1/2 tsp pepper
2 eggs (beaten)

1 cup mozzarella cheese

Boil lasagna noodles per package directions.  (I recently discovered the 'no bake' lasagna noodles and they work great too.)  Layer the noodles, meat mixture & cheese mixture until gone.  Spread grated mozzarella cheese over the top and bake uncovered at 350 degrees for 45 minutes.

  2. I am pretty certain it is 1 pound of mozzarella cheese.

  3. Whoops, now I am feeling nit picky but the Amelia recipe I have doesn't call for tomato soup. Years ago I started to use a jar of prepared spaghetti sauce (along with all the other ingredients except soup) and it has made a great difference.

  4. Mom, I'm just using the alterations you told me to use. My original actually calls for tomato juice but you said to substitute the soup instead and we love it.
