Baked Balsamic Asparagus with Parmesan and Cashews


We love asparagus and broccoli and eat them just about every week but after doing the same old lemon juice method week after week, we needed something different. That's when this recipe was born... 



1 bunch asparagus
olive oil (could also use cooking spray, butter or margarine)
salt
freshly ground pepper
cashews
1 tablespoon soy sauce
1 teaspoon balsamic vinegar
fresh grated Parmesan cheese

Preheat oven to 400 degrees. Wash and trim asparagus. Drizzle with olive oil and toss until coated.  Spread evenly on a baking sheet. Season with salt and freshly ground pepper. Bake for 5 minutes. Remove from oven, toss and add cashews. Bake for another 5-7 minute or until tender-crisp. Remove from oven and drizzle soy sauce and balsamic vinegar over asparagus. Toss to evenly coat. Sprinkle with Parmesan cheese and serve.

{to make it vegan, leave Parmesan cheese off}

  4. I've made this twice now. Good side dish to so many things. And I will admit...I never measure anything, I just throw it all on! Still tastes great! :)
