Hawaiian Haystacks

This one is for Emily. There are lots of different recipes for Hawaiian haystacks, this is just the one I have on hand. Emily will have to post a picture later since I haven't made this recipe for a while! :)

1/2 Cup Butter
1/2 Cup Flour
1/2 tsp. Salt
3 Cups Milk
1 Can Cream of Mushroom Soup
1 Cup Sliced Mushrooms
6 Chicken Breasts, cooked and cut into pieces

Sticky White Rice

Melt Butter in large saucepan. Add flour and salt; stir together well. Add milk and cook until thickened, stirring constantly. Add cream of mushroom soup, mushrooms, and chicken. Simmer on low heat for 15 minutes.

Serve over sticky, white rice with any of the following:
Grated Cheese
Chopped Celery
Chowmein Noodles
Pineapple Tidbits
Chopped Tomatoes
Toasted Sliced Almonds
Chopped Green Onion
...anything else that tickles your fancy!

Serves 8!

  1. we love these! We have them pretty often. Here are some other topping ideas from a recipe I have:

    -shredded carrot
    -green/red bell pepper
    -sliced almonds

Also, I like to use tofu in terriyaki or sweet and sour sauce, cream of celery soup and no mushrooms :)
