Buttermilk Chocolate Cake & Frosting

This is the chocolate cake my mom makes for birthdays in our family. It's delicious! Shauna has served it to the missionaries and sounds like it was a hit.



Cake

Mix and bring to a boil over medium heat. Remove from heat.

2 sticks butter
1 C cold water
1/2 C cocoa (Ghirardelli is best)

In a separate bowl mix together:
2 C flour
2 C sugar
1 1/2 tsp. baking soda
1/2 C buttermilk (if you don't have buttermilk, you can put a cap full of white vinegar into 1/2 C of regular milk)
2 eggs
2 Tbsp. vanilla

Add boiled ingredients to bowl and mix all ingredients together well. Grease and flour two round cake pans or grease one 9x13 pan (doesn't need flour) and pour batter in. Bake at 350 degrees for 22-25 minutes. Test with toothpick.



Chocolate Frosting

This makes a lot, enough for 2 cakes, so you probably want to half it.

2 cubes margarine
4 cups powdered sugar
1/4 c half and half
1/2 cup cocoa
2 T vanilla

  5. I have used this frosting recipe too but thought it had too much butter. It was delicious but I really felt guilty!

  6. We got this recipe from you or your mom awhile back and love it. Made it for a Smith reunion planning meeting and it was a big hit.

  10. I noticed in the cake part of the recipe that you boil on the stove ...I add 1/2 cup Ghiradelli powder not 3 Tb...but Marijke maybe you have refined it!
