A while back we were driving home from work and needed to drop some stuff off @ Greg's brothers house. When we got there my sister-in-law had just finished making dinner and invited us to stay. I felt like such a mooch just showing up at dinner time! Anyway, she had made a wonderful grilled chicken in a citrus marinade. She didn't have the recipe written down & said she kind of just made it up off hand. Since then I have tried a few different ways of making my own Citrus Chicken. I made one tonight that was pretty good. The only thing I would change would be to add about half a grapefruit {zest & juice} & maybe a garlic clove to the marinade... I have used it in the past and I think it adds some great flavor!
Also, this kind of recipe is the reason I LOVE, LOVE, LOVE my microplane zester!!! You get all the great zest without any of the yucky bitter white stuff. It also takes about a tenth the time using this puppy! Fabulous!
Citrus Grilled Chicken
1 Lemon, zest & juice
1 Lime, zest & juice
1 Orange, zest & juice
3 TBSP Green Onion, sliced
2 TBSP Olive Oil
2 TBSP Honey
Salt & Pepper
Boneless, Skinless Chicken Breasts
Mix all ingredients together and put in ziplock bag. Reserve small amount of marinade. Season chicken with salt and pepper & place chicken in bag. Refrigerate for anywhere from 1-4 hours, turning occasionally. Grill on BBQ at medium-high heat for about 4 minutes per side, or until chicken is cooked through. Marinate with reserved sauce one time during cooking.
**I have also grilled this up and then cut it into small pieces and served it as citrus grilled burritos. Very tasty! I just reserved about a 1/4 cup juice & put the sliced chicken back in the juice when I served it. Yummo!

ReplyDeleteRichard always asks for chicken and won't eat other kinds of meat unless I buy it and just make it, or we're eating at some one else's house. Chicken recipes are great since I make it so often! And this one looks really good.
ReplyDeleteI haven't seen grapefruit in the few citrus recipes I've looked at, but it sounds like a nice addition.
