Delicious Pork Tenderloin with Mushrooms

This is the Pork Loin that goes fabulously with the Lemon Rice. I realized this weekend that this is a Sunday staple about once a month - in good weather; we always grill it and its so juicy and tender. I never much cared for mushrooms until I started eating them in this recipe. Now I really don't mind them and will sneak them into things all the time. They're good for you right?? Anyway, this is one of our all time favorite recipes. DELICIOUS!

Pork Loin with Mushrooms

2 - 3 Pork Tenderloins

Marinade:
1 1/4 Cups Vegetable Oil
3/4 Cup Soy Sauce
1/4 Cup Worcestershire Sauce
2 TBSP Dry Mustard
1 TBSP Pepper
1/2 Cup Red Wine Vinegar
1 1/2 TBSP Parsley
1/3 Cup Lemon Juice
2 Cloves Garlic, minced

8 ounces sliced fresh Mushrooms

Blend the above marinade ingredients in blender. Pour over tenderloins and marinate for 3 to 4 hours (Or overnight. Or for 8 hours. Longer is not a problem... we've done it every way). Grill pork on the BBQ @ medium heat for about 20 minutes, turning and basting occasionally. Add mushrooms to remaining sauce and heat thoroughly on stove top. Slice tenderloins and pour marinade over top to serve, or use as a gravy and let people pour it on individual portions of meat.

  1. Hmm, I've never been a big mushroom fan either. I wonder if this would change my mind. You sure make it sound good.
