Apricot Jam

We hit the jackpot this year with the neighbor's apricot tree and I have been going to town!!! I got this recipe for apricot jam from a former co-worker and it is divine!

APRICOT JAM

4 cups sugar
4 cups of apricots (with the skin)
1/2 cup crushed pineapple
1 small package of orange jell-o

Bring the first 3 ingredients to a slow boil and cook for 10 minutes. Take off the stove and immediately add the package of jell-o.

Next you can either jar them and freeze 'em, or seal them. To seal the jam boil your jars and lids for a couple of minutes. Then take them out of the water, fill with jam and turn the jar upside down for 15 minutes. Turn them back over after the 15 min are up and they will pop/lock shortly after.

  1. I love homemade jam! No neighbors with apricot tree's around here though! Lots of zucchini being handed out... and I don't think that would make a very good jam!
