Brown Sugar Banana Bread

Makes one 5"x9" loaf.

Bread
1 C sugar
1/2 C margarine or butter, softened
2 eggs
2 C flour
1 t baking soda
1/2 t salt
3 mashed overly-ripe bananas (I only had 2, but the banana flavor was still plenty)
1 t vanilla
(1/2 chopped nuts)




Heat oven to 350 F/180 C. Cream sugar, butter and eggs. Mix in flour, baking soda and salt. Add bananas, vanilla (and nuts if desired). Pour batter into paper-lined or well-greased and floured loaf pan.

Topping
2 Tbs. butter
1/2 C brown sugar
Approx. 5 dashes cinnamon

Cut butter into sugar and cinnamon. Sprinkle across the top of batter. Bake for 55 minutes then check. Bread is done when toothpick in center comes out clean. Cool 5 minutes. Loosen sides of loaf from pan and remove. Cool completely before slicing.




I started baking this one shelf too high, so the edges were cooking faster that the middle. I moved it down but I think the more doughy center sunk down. This has never happened to me before, but it was almost better. The brown sugar topping sunk down with it and there was a nice layer throughout the middle!

  3. We made this the other day. Good stuff! I would suggest not doing what we did though... we used a 4 1/2" X 8 1/2" baking dish. It was a little too small. Thanks Marijke!

  5. This was DELICIOUS!!! I even had a friend ask for the recipe after I served it to her. I don't love banana's, so I only put 2 in to try and keep the flavor mild, and it was great! I LOVED the topping... makes me want to put brown sugar on top of all the breads I make! :)
