Easy Pumpkin Chocolate Chip Cookies

I got this recipe years ago from my mother-in-law. It is SO easy. I don't think I know of an easier recipe actually. When she gave this to me, she said it was a weight watchers recipe, and that each cookie has like 1 point. I don't know anything about WW, except that the lower the point, the better. Now, I am pretty sure it was 1 point before you add the chocolate chips, but I say splurge.

Pumpkin Chocolate Chip Cookies

1 Box Spice Cake Mix
1 {15 oz} Can Pumpkin
1 - 2 Cups Semi Sweet Chocolate Chips

Mix cake mix and canned pumpkin until smooth. Add chocolate chips and mix until combined.
Place on parchment covered cookie sheets. Bake @ 350 degrees for 14-17 minutes. They will stay pretty puffy, so you will have to watch your first batch to determine how long your oven will take to thoroughly cook them. Place on cooling racks... then eat them by the handfuls.

  2. Do you have to use the parchment? I don't have any.
