Margarita Chicken

This is a quick and easy chicken marinade that you can throw in the fridge in the morning and grab and grill at dinner time. It is tasty on its own but would also work wonderfully in a pasta or a salad etc. I paired this with some grilled veggies and a big bowl of fruit and had diner on the table in less than 20 minutes! Awesome!


Margarita Chicken

1 {10 oz} Can Frozen Margarita Mix, thawed {the non-alcoholic kind}
3 TBSP Lime Juice
3 garlic Cloves
4-6 Boneless Skinless Chicken Breasts
Salt
Pepper

In a medium size bowl, combine thawed margarita mix, lime juice, and garlic. Pour all but 1/4 cup of the mix into a large ziplock bag. Place chicken in bag and thoroughly coat. Put in refrigerator for at least 8 hours. When ready to grill, lightly sprinkle each breast with salt and pepper. Discard excess marinade.
Grill chicken over medium heat for approx 5-7 minutes on each side, or until no longer pink and reaches internal temperature of 160 degrees, basting frequently with the reserved margarita mix.

  1. This looks yummy. Now that we have a grill I'm really enjoying recipes like this one. Makes dinner so much easier. Never heard of margarita mix. Have to go & look for it I guess cuz this looks like a winner!
