Lemon Rice
3 Cups Chicken Broth
1 1/2 Cups Uncooked White Rice
3 TBSP. Butter
1 Small Onion, chopped
1/4 Cup Pinenuts, toasted
1/4 Cup Lemon Juice
1 TBSP Fresh Dill, chopped (or 1 tsp. Dried Dill)
1 TBSP Fresh Mint, chopped (or 1 tsp. Dried Mint)
Salt & Pepper to taste
In large saucepan, heat Chicken broth and rice to boil. Reduce heat to low and let simmer for 15 minutes with lid on. In small saucepan, melt butter and add onions. sautee for approx. 5 minutes or until translucent. Add onion, dill, mint, pinenuts, lemon juice & salt and pepper to cooked rice. Mix well and fluff. Heat through and serve immediately. Yum...
Also, I have yet to find dried mint @ any store, so if you find it, buy it! half of my mint always goes to waste. I'm considering planting a little in an indoor pot... that's how much I love this rice!
Hmm, I've never tried this one. I think we've missed out on a lot by moving away so soon. Sounds good though.
ReplyDeleteThis is really good! There is a less expensive version in the Lion House Cook Book that I also make using slivered almonds. Good way to feed a crowd!
