This is the recipe mom gave me. Every time I make it the family gets so excited!
in mixer or blender:
3 eggs
1 cup oil
1 TBSP vanilla
2 cups grated zucchini
in separate bowl:
3 cups flour
1 cup white sugar
1 cup brown sugar
1 tsp salt
1 tsp baking soda
1/4 tsp baking powder
1 TBSP cinnamon
chocolate chips (optional...personally my favorite part!)
Add wet ingredients to dry and mix until thoroughly blended. Grease baking pans with shortening. Bake @ 350 degrees for 25-50 minutes (depending on pan size). Bread is done when a toothpick inserted in the middle comes out clean.
Whoa....forget the chocolate chips but do add 7 cups of chopped walnuts!
ReplyDeleteYes chopped walnuts are excellent in this recipe. Unfortunately at my house if I were to add nuts I'd be the only one that would eat it and I don't need any more temptations!
