Rumbi Soup

I got this recipe from a friend who is a chef, and it is amazing! The picture does not do it justice, I will have to try again sometime.


1 medium onion
1 cup celery cut up
1 cup sliced carrots
1 cup shredded or cubed chicken
2 cups chicken stock
2 cups water
1 can coconut milk
1 handful of fresh cilantro
1 pkg fajita seasoning mix (as much as you want)
1/2 cup uncooked rice
1 lime

Serve with cheese, small chunks of guacamole, sour cream, a sprinkle of fresh cilantro and tortilla chips. DELICIOUS!!!

* I like to cook the chicken ahead of time and then heat all of the ingredients together until the carrots are cooked to perfection. I also just make the rice in a rice cooker and let everyone put the desired amount in their bowls. (Spencer likes a lot--to make it denser!) This way I can freeze the leftovers, just reheat and serve!
