Triple Chocolate Bundt cake

Bundt cakes remind me of my Mom. She always makes the best ones that are moist, delicious, and addicting! I think this recipe is pretty much the basic chocolate bundt that mom made growing up. Its fabulous. I actually went out and bought a bundt pan after making this when we were in Utah! :)


TRIPLE CHOCOLATE BUNDT CAKE

1 Box Devils Food Cake Mix
1 Box Instant Chocolate Pudding
4 Eggs
1 Cup Sour Cream
1/2 Cup Warm Water
1/2 Cup Vegetable Oil {I've used olive oil as well. Healthier and tasted the same}
1 Cup Semi Sweet Chocolate Chips
1/2 Cup Milk Chocolate Chips

Mix first 6 ingredients in electric mixer, being sure to scrape sides of bowl. Mix for 2-3 minutes and then stir in chocolate chips. Prepare bundt pan by spraying with non-stick cooking spray and coating with 1-2 TBSP flour (or use floured cooking spray... my personal favorite). Pour batter into pan and bake in 350 degree preheated oven for 45-55 minutes (depends on your oven... mine was more like 55, but my in-laws was more like 45). Use toothpick to test for doneness. Cool on wire rack for about 20 minutes before moving to cake platter.

FROSTING

1/2 Cup Butter
4 TBSP Cocoa
1/3 Cup Milk
3 1/2 - 4 Cups Powdered Sugar

Melt butter in small saucepan over medium heat. Add in cocoa and mix well, allowing to boil. Add in milk. Stir constantly. Remove from heat and beat in powdered sugar with an electric hand mixer until smooth. Pour warm frosting over warm cake. Let cook completely before cutting.

{this frosting made a bit too much for my liking. I didn't end up using it all. Frost some graham crackers if you have them on hand!}
