Cucumber Sandwiches


I love cucumber sandwiches! They are so light and fresh in the summer time and perfect for a tea party.



8 ounces spreadable cream cheese
2 teaspoons ranch dressing salad mix
12 slices pumpernickel rye bread, or whatever kind you prefer (I used the honey grain bread we already had it was delicious!)
2-3 cucumbers
Paprika


In a bowl, combine cream cheese and dressing mix. Spread on one side of each slice of bread


Peel cucumbers, if desired, and place on six of the slices of bread.


Sprinkle with paprika. Top with remaining bread and serve immediately. Serves 6.

  3. You know I've never had a cucumber sandwich. I like to put cucumbers on my Subway sandwiches though so perhaps I should try this out. Cucumbers seem to be the veggie produced the most by our little back porch garden.

  4. I know I've left like a million comments in the last 2 days but I got on your website to find out what to do with the surplus of veggies I have. I also made these sandwiches for lunch today. They were great! Even Tom liked them and he's not a huge cucumber fan.
