Frangipane Tarts

This recipe comes from Jamie Oliver.  His new show "30-minute meals" is by far my favorite cooking show.  I'm going to miss it when we move.  This recipe will be the British version because that's the one I have right now {has been updated with American conversions}.


If you live in the UK you can buy the deep shortcrust pastry cases at M&S.  Some Sainbury's might carry them too.  I'm not positive where you can get them in the US.

Turn your oven to 190°C/375°F/gas 5.

Ingredients
-6 small, deep shortcrust pastry cases (approximately 3-4 inches diameter and 1½ inches deep)
-1 egg
-100g/3.75 oz ground almonds
-100g/3.75 oz butter
-90g/3.25 oz golden caster sugar (any sugar would work, but he suggests this because it is less refined sugar)
-1 orange
-1 tablespoon vanilla paste or extract
-½ a 350g (about 12 oz) jar of good-quality raspberry Jam (I used seedless because that's what I prefer)
-One 250g (about 8.5 oz) tub of crème fraîche, to serve (I suggest whipped cream or ice cream for a sweeter addition)



Put the 6 pastry cases on a baking tray. Make a frangipane mixture by cracking the egg into a mixing bowl and adding 100g of almonds, 100g of butter and 90g of golden caster sugar. Grate over the zest of ½ an orange and add 1 tablespoon of vanilla paste or extract. Use a spoon to mix everything together. Spoon a small teaspoon of jam into each pastry case. Top with a heaped teaspoon of frangipane, add another small teaspoon of jam, then finally another heaped teaspoon of frangipane. Put the tray in the oven on the middle shelf and set the timer for 18 minutes exactly.

When the little tarts are golden and cooked, turn the oven off and take them out. Serve them warm, with a dollop of crème fraîche on the side.

  1. Ok, first off, what are you doing up so late? Second, these look yummy. Any easy way of converting the measurements to their US equivalencies so it's easier to put together over here? :) Is that you in your English kitchen? So cute!

  2. I'll convert them and add the US measurements soon! Yes, that is our kitchen, it's fabric from IKEA on the walls, I love it! Also, we already had our daylight savings so it wasn't as late as you might think. It was only 10 pm.
