This is a recipe I got from my mother-in-law. It's a favorite at our house!
1 can (10 1/2 oz) condensed tomato soup
1 lb ground beef
1/4 cup uncooked rice
1 egg, slightly beaten
1/4 cup minced onion
2 TBSP minced parsley (I just use about a tablespoon of parsley flakes)
1 tsp salt
1 small clove garlic, minced (or squeezed using a garlic press)
2 TBSP shortening
1 cup water
Mix 1/4 cup soup with beef, rice, egg, onion, parsley & salt. Shape into meatballs. In a large skillet (I use an electric one) coat bottom with shortening and then spread garlic over the top. Brown the meatballs in the shortening/garlic mixture and then cover with remaining soup and water (mixed together). Cover and simmer for 40 minutes or until rice is tender. Stir often.
We really like these ones... I don't cook with a lot of ground beef so this is one of the few recipes I make with it!
