Chicken Cordon Bleu Casserole



This casserole was delicious and oh so easy! I really couldn't think of anything to make for dinner tonight, so I searched online looking for something that would work with the food in my fridge, and voila! We will make this one again and again. It is so easy and the perfect comfort food. Only problem in our house... its FULL of Cheese/Dairy products! Cream of Chicken Soup, Swiss Cheese, Milk, Cheddar Cheese... WOW! Thats a lot of dairy for someone who's lactose intolerant! Good thing he loves me... and my cooking ways! :)



Chicken Cordon Bleu Casserole

1 Package Stove Top Stuffing Mix, made according to package directions and set aside
1 Can Cream of Chicken Soup
1 Cup Milk
1 Lb. Deli Ham, sliced into thin strips {I actually used the super thin sliced kind that is pre-packaged and it was great. I don't like it too thick}
1 Cup Swiss Cheese, grated
2 Cups Cheddar Cheese, grated
2 1/2 Cups Cooked Chicken Breast, cubed
Pepper, to taste

Spray a 9x13 inch baking dish with cooking spray. Line bottom with cooked and cubed chicken breast pieces & pepper to taste. In a different bowl, mix milk and soup and set aside. Layer ham, swiss cheese, and 1 cup cheddar cheese on top of chicken. Pour milk/soup mixture over the chicken base, and then place cooked stuffing on top and spread out evenly. Sprinkle remaining cup of cheddar cheese on top of stuffing. Cover and cook @ 375 degrees for 30 minutes. Remove foil and continue to cook for about 10 more minutes.
