Spinach Torellini Salad

This recipe came from Shanna (McConkie) Jensen, who made it for a family bridal shower this summer. Luckily, she was kind enough to share the recipe. It is absolutely amazing! The dressing makes a lot and you would have plenty if you halved it.

1 bag spinach
1 small bag cheese tortellini, cooked to package directions & cooled
1-2 cups chredded mozzarella cheese
1/2 purple onion sliced very thin
cherry tomatoes, sliced in 1/2
1 cup mushrooms

3/4 cup red wine vinegar
1 cup olive oil
3/4 cup sugar
1 1/2 TBSP poppyseed
3/4 tsp. dry mustard
1 1/2 tsp. salt
